PRODUCTION AREA: Vineyard San Benedetto, Acquaviva delle Fonti
SOIL: Red iron soil, characterised by an underlying layer of limestone
VINE-TRAINING SYSTEM: 70 year-old bush-trained vines
PLANTS PER HECTARE: 8000
PRODUCTION PER HECTARE: 3 tons
HARVEST: Manual harvest during the last week of September
VINIFICATION: Alcoholic fermentation in stainless steel tanks at a controlled temperature
AGING: 12 months in stainless steel tanks and 12 months in the bottle
ALCOHOL CONTENT: 15% vol.

TASTING NOTES

SIGHT: Deep purple-red with ruby glares
NOSE: Elegant nose of sour cherry, blackberry, prune, cherry, plum, carob and fig. Delicate hints of flowers (rose) and plants (thyme, wild mint, cinchona) enhanced by hints of liquorice and marzipan
PALATE: Sumptuous and velvety palate, with fine sweetness. Supported by pleasing tannins and a vivid mineral-acid character. Long and satisfying conclusion, that perfectly matches with the nose
