Description

  • GRAPES: Maresco, Marchione, Bombino Bianco and Falanghina
  • Production Area Locality 'Macchia di Gatto' in Acquaviva delle Fonti, Casamassima and Sammichele di Bari
  • TYPE OF SOIL: Red ferruginous soil with an underlying limestone layer
  • GROWING METHOD: Spurred cordon
  • Grape harvest: Hand harvest in boxes, during the last week of August / first week of September
  • Vinification: Soft pressing and brief maceration in the press. Second fermentation in bottles. Each bottle rests a minimum of 36 months sheltered from light, drafts and knocks, at a controlled temperature, in our cellar, in deep contact with the yeasts. Degorgement is performed by hand at cold.
  • Alcohol Content 12% vol.

  • APPEARANCE: Brilliant straw color and fine perlage.
  • NOSE: Delicate nose rich in nuances, with flavours of pastry, cedar, bergamot, and hints of apple, anise, fern and white flowers.
  • PALATE: Delicate and harmonious, with a great body and a pleasant freshness.
  • FOOD PAIRING: Perfect with seafood, crustaceans, sushi, risotto, rice & mussels from local deli, fresh and semi-fresh cheeses.
